Applesauce Muffins

Can be made with or without sweetener!

1 1/2 cups applesauce
3 eggs

1/2 cup maple syrup (optional)
1/2 tsp vanilla
1/3 cup sunflower or vegetable oil
1 1/2 cup Bob’s Red Mill 1 to 1 GF Flour or whole wheat pastry flour
3/4 cup Battenkill Brittle Crumble Crumbs + extra for topping
1 1/2 tsp baking powder
3/4 tsp baking soda
3/4 tsp salt
1 1/2 tsp cinnamon

Preheat oven to 350. Mix together wet ingredients. Add dry. Ladle into muffin tins. Top with extra Crumble. Bake for 20 minutes.

If you make them without maple syrup, they are also delicious with some honey spread on!
